nunka. Wattleseed (Ground) – 40gm

Wattleseed, the Acacia, was a mainstay in the diet of Australia’s earliest mobs for thousands of years providing a rich source of protein and carbohydrate in times of drought.

The seed was crushed into flour between flat grinding stones and cooked into cakes or damper. Even the green seeds of some species were eaten after baking in the hot coals.

Wattleseed contains potassium, calcium, iron and zinc in fairly high concentrations. With a low glycemic index, they are good for diabetics, providing a steady stream of sugars that do not produce sudden rises in blood glucose levels.

Most vitamins are found except for C, B12 and riboflavin. Wattleseed are high in fibre – with over 30%.

There are over 120 species of Acacia however not all are edible.

Lemon Myrtle (Backhousia citriodora) is a beautiful Australian shrub naturally occurring in the wetter coastal areas of northern New South Wales and southern Queensland. It grows up to 3 metres high, with graceful hanging branches of soft green leaves. The clusters of cream feathery flowers occur in western Autumn, creating a spectacular fragrant display.

Used fresh, the Lemon Myrtle leaf is a most versatile and refreshing herb. For storage, the leaves are cool dried (to prevent loss of essential oils) and then ground and stored in a cool, dry manner for later use.

Native Basil (Prostanthera rotundifolia) is an aromatic plant whose native distribution is in South Australia, New South Wales, Victoria & Tasmania.

Long time inhabitants of the areas to which it is endemic used this plant for medicinal and ceremonial purposes.

Colonisers often called it the “Five Spice Plant” because of its delightful fragrant mix of basil, mint and sage. It can be used in any dish where sweet basil would be used, complementing any Mediterranean tomato based dish.

Strawberry gum (Eucalyptus olida) is a native Australian eucalyptus tree primarily found in the rainforests of New South Wales. It gets its name from the distinctive sweet, fruity aroma reminiscent of strawberries that comes from its leaves and essential oils.

Unlike many other eucalyptus species with sharp, medicinal flavours, strawberry gum offers a more delicate, fruity flavor profile, making it popular in both culinary and wellness products.
