Aniseed myrtle (Syzygium anisatum) is a native Australian rainforest plant prized for its sweet, aromatic flavour and culinary versatility.
Aniseed myrtle is a small tree native to the subtropical rainforests of northern New South Wales. Its leaves have a strong aniseed (liquorice-like) aroma and taste, thanks to a naturally occurring compound called anethole—the same compound found in star anise and fennel.
Traditionally used by Indigenous Australians for its flavour and medicinal properties, it’s now celebrated in modern Australian cuisine for both sweet and savory applications.
